Ingredients :

200 grams Whipping Cream

1/2 tsp Vanilla Extract

5-6 Ripe Bananas

1/2 cup SPRIG Banana & Caramel Banoffee

For Oatmeal Crumble :

1 cup Oatmeal

1/3 cup butter melted

1 tbsp brown sugar

Method :

Prepare a ice bath and whip the heavy cream till stiff peaks appears, add vanilla extract and fold in gently. Set aside in the fridge and meanwhile prepare the oatmeal crumble. Pour sugar and melted butter into a bowl and , stir until fully combined. Add oatmeal and stir with a fork. Transfer the mix into a 9″x 13″ casserole dish and press into a even layer. Bake at 350*F for 10-12 minutes, until light brown. Allow to cool. For assembling the dessert, take serving glasses and line them on the counter. Spoon 2 tablespoon of oatmeal crumbs and add into the base of the serving glass. Add some banana puree all over the crumble making the first layer. Now add some banana slices over it and gently press them on the puree. Pour SPRIG Banoffee all over the banana spread generously making another thick layer. Now take whipped cream in a piping bag and pipe little florets on the top using star nozzle. Cover the dessert beautifully. Drop some SPRIG Banoffee over the whipped cream and sprinkle some oatmeal crumbs all over. Refrigerate for 10 mins and serve chilled.

Vazhaithandu Mor | Banana Stem Buttermilk | Gluten Free Recipe

Hi Supermoms,

Vazhaithandu/ Banana Stem is rich in fibre and is also helpful in weight management especially reducing belly fat, promotes healthy kidney functioning and also prevents acidity. I have earlier shared the Vazhaithandu Mor Kootu recipe, Vazhaithandu Sambar recipe and Vazhaithandu pachadi recipe. 

Today, I am sharing another healthy and easy way to include banana stem in our diet. Cleaning and chopping the banana stem takes longer time than cooking them . In this recipe, as you are grinding and filtering the fibre, you can chop them roughly along with the fibre. Buttermilk helps in digestion. In ayurveda, it is considered as an elixir to good health. Adding the juice of banana stem increases the nutritional value and health benefits of drinking this buttermilk. 

Plantain Stem Buttermilk Recipe


Vazhaithandu Mor:

Preparation time : 15 minutes
1 cup = 250 ml cup
Serves : 4

Ingredients :

250 gm vazhaithandu /banana stem OR 1 cup vazhaithandu ( roughly chopped)
500 gm curd ( whisked)
salt to taste

Masala for grinding :

1 green chilli 
1/2 " ginger 
handful of coriander leaves ( optional)
1 sprig curry leaves 

Method :

1. Add the chopped banana stem into the jar of mixer.

2. Grind it well , extract the juice and discard the fibre.



3. Grind the green chilli, ginger, curry leaves and coriander along with 2 tablespoons of curd .

4. Add this to the extracted banana stem juice. 

5. Dilute the remaining whisked curd and add it to the banana stem mixture.
6. Add salt and mix well.

Your delicious and healthy Vazhaithandu Buttermilk is ready to be enjoyed.

Lemon ginger popsicle recipe, lemon popsicle

Simple and easy lemon popsicle with refreshing ginger flavour. Perfect for a hot summer day, with just 3 main ingredients.
I wanted to have something icy cold on a humid day and thought of making this simple popsicle with just lemon and ginger. I love lemon and ginger flavour together and as a popsicle sure I wanted to taste. So nothing fancy, but to satisfy craving for popsicle. It’s easy to make popsicle rather than sorbet, granita or an icecream. No taking out and processing multiple times. Just mix and pour into the moulds and let it set in the freezer. I make popsicles rarely because my freezer is mostly full with the groceries that i get from India to prevent from insects for long time. This time just set two popsicles and made. I knew Aj would not like ginger flavour, so it’s for just me and Vj.

Ingredients

  • Lemon – 2
  • Ginger – 1 tsp
  • Sugar – 1/4 cup
  • Water – 1 cup
Method
  1. Heat sugar with 3/4 cup water, mixing thoroughly to just dissolve the sugar. Switch off the flame.
  2. Grind ginger with 1/4 cup water and collect the juice by straining.
  3. Once the syrup cools, squeeze in the lemon juice.
  4. Add ginger juice, mix well.
  5. Pour into popsicle moulds and freeze for 8-10 hrs.
  6. To remove the popsicle from the mould after completely frozen, show all the sides of the mould under tap water for a minute. Pull off gently.



Notes

  • Adjust lemon juice as per the volume of juice you get. If you taste the mixture, the tanginess should be more, so that it will be right after being frozen.
  • Even ginger can be adjusted as per the strength you need.
  • You can add a tsp of lemon zest  for more lemony flavour than ginger flavour.

Senai Kizhangu Varuval | Home Style Yam Chips | Gluten Free and Vegan Recipe

Home Style Yam Chips

Hi Supermoms,

Making home made vegetable chips has always been in our tradition. Vegetable chips are a part of our wedding menu too . There will be a raw banana/plantain chips or yam chips that will be served along with appalam . The yam can be either cut into tiny cubes or can be sliced into thin squares. You can decide the shape of the chips. 

Thin slices helps the yam to cook faster and be crispier for a longer time. Soaking the yam in lemon juice helps to prevent itching of the throat . Also use yam that is a couple of days old .

Instead of deep frying you can add oil in a wide pan and shallow fry them too. Though this might take double the time to cook . I have not added any spice or salt to this recipe as the chips are tasty as is. But you can always add spice powder and mix.

Vegetable Chips

Senai Kizhangu Varuval :

Preparation time : 20 minutes
Cooking time : 20 minutes
Serves : 4

Ingredients :

250 gm Elephant Foot Yam/Senai Kizhangu ( sliced thinly )
juice of 1 lemon 
oil to fry 

Method :

1. Add the lemon juice into the sliced yam pieces and mix well.

2. Spread them in a clean muslin cloth and allow them to rest for at least 10 minutes.
3. Heat oil in a kadai /wok for frying
Chef tip : Using an iron kadai will give the chips good colour and texture. 
4. Drop one slice to check if the oil is ready.
Chef tip : The yam has to sizzle and instantly come on surface of the oil.

5. Fry the yam slices in batches till they are well cooked and crispy . 
Chef tip : Keep stirring and turn the chips once or twice so that they are well cooked. 

6. Remove and drain them in a kitchen towel. 
7. Repeat the same method for the remaining batch.
8. Add spices and salt ( if you like) and mix well. 


Home made Yam Chips /Senai Varuval is ready to be served as a snack or as a part of your lunch menu.

Tam Brahm Style Thakkali Sweet Pachadi | Tomato Sweet Pachadi | Tomato Sweet Pachadi using Jaggery| Gluten Free Recipe

Tomato Sweet Pachadi

Hi Supermoms,

If you have attended Tam Brahm marriages or special functions , you would have tasted this delicious fruit pachadi. Mainly tomatoes  and refined sugar are used in this preparation. But as I have reduced the usage of refined sugar for my family,  I have substituted it with Palm Jaggery /Karupatti and hence the darker colour . 

You can add dates and dry fruits of your choice to make this pachadi more rich. Half teaspoon of ghee to fry the tomatoes adds flavour to the pachadi, but if you are vegan, you can substitute it with oil. 

There are different methods to make this pachadi. I shall be sharing another version soon. You can even serve this as a side to poori/puri and chapathi. 

Tomato Sweet Pachadi


Tam Brahm Style Thakkali Sweet Pachadi :

Preparation time : 10 minutes
Cooking time : 20-25 minutes
Serves : 4-6
1 cup =250 ml cup

Note : Use ripe tomatoes to make this pachadi. 

Ingredients :

2 cups tomatoes (finely chopped)
1 cup palm jaggery ( powdered)
1 green cardamom ( powdered)
1/2 teaspoon ghee/clarified butter OR oil 

Garnish (optional, to be roasted in ghee/oil and added):

4-5  cashew nuts ( halved)
5-6 raisins 

Method: 

1. Heat a kadai/pan with oil/ghee and add the tomatoes.
2. Cook them over low heat for 6-7 minutes or till the time the excess water is absorbed. 
3. Transfer them to a plate or another container.
4. Add 1/4 cup of water to the powdered jaggery and add it to the kadai.
5. Heat the kadai with the jaggery mixture over low flame.
6. Once the jaggery melts, filter impurities and place the kadai back on the flame.
7. Let the jaggery water boil and come to a one string consistency.
8. At this point, add the prepared tomatoes.
9. Keep stirring and lightly mashing them, till they become thick. 

10. Switch off.
11. Garnish if you like.

Your delicious Sweet Pachadi with the healthy twist is ready to be enjoyed.

[caption id="attachment_3842" align="alignnone" width="2993"]Mixed fruit crumble Mixed fruit crumble[/caption] I had a lot of fruits in my refrigerator unused and I decided to make this quick and delicious dessert from it.My advice to you will be, that do not make it when you are the only person at home otherwise you end up eating this whole thing as it is quite irresistible.You can make with any and every fruit generally which are citrus in nature.Avoid adding too many water based fruits(like water melon),though you can add in combinations.

Mixed fruit crumble recipe

A very easy and delicious colorful recipe which you can prepare anytime with all the seasonal fruits and relish

For the filling

  • 1 cup plum chopped
  • 1 cup pears chopped
  • 1/2 cup peach
  • 1/2 cup ripe sweet papaya
  • 1 cup brown sugar
  • 1 tsp cinamon(1 stick),cloves(2),2 cardamom (ground finely)
  • 1 tsp ground ginger
  • 1/2 tsp lemon juice

For the crumble

  • 1 cup Whole wheat flour
  • 100 gm salted butter
  • 1/2 cup sugar
  1. For the filling mix all the ingredients together.If you think the fruits are sour add more sugar.

  2. mix the flour with chunks of butter and sugar and mix with your fingers till they dont form lumps.the mixture should be crumbly and dry and you should be able to form big lumps by pressing with your palms.

  3. Preheat your oven at 200 degrees for 5 minutes

  4. Layer  your filling in a baking dish



  5. Cover with the crumble leaving gaps in between



  6. bake for 30 minutes till the filling starts bubbling and the crumble becomes crisp

  7. Serve with a scoop of vanilla ice cream
