Kung Pao Chicken Recipe

The combination of spicy, sweet and tangy sauce makes this oriental-inspired chicken dish a winner. A quick and easy weeknight recipe. This highly addictive stir-fried chicken continues to be one of the most popular Chinese dishes in America as the succulent.

Kung Pao Chicken Recipe

Yield: 2 servings.

Ingredients:

2 skinless, boneless chicken breast halves
1 tablespoon soy sauce

2 teaspoons sugar
2 tablespoons sherry or apple cider
2 teaspoons cornstarch
1/2 cup vegetable oil
5 - 6 water chestnuts
5 red hot peppers
4 oz. chopped peanuts
1/2 teaspoon ground Sichuan pepper

Directions:

1. Cut chicken into 1/2 inch chunks. Mix with soy sauce, sherry and cornstarch.

2. Prepare the sauce: In another bowl, combine the vinegar, soy sauce, oil, sugar, cornstarch, and Sichuan pepper. Stir until the sugar and cornstarch are dissolved and set aside.

3. Heat 1/2 cup oil in wok or skillet, stir fry chicken chunks. When chicken is cooked, remove the chicken and most of the oil, leaving 2 tablespoons oil in the wok.

4. Add water chestnuts and hot peppers and cook for 5 minutes. Add chicken and peanuts. Pour in the sauce and mix to coat the other ingredients.

5. Stir in the peanuts and cook for another 1 to 2 minutes. Transfer to a serving plate, sprinkle the scallion greens on top, and serve.

Chilli Chicken Recipe

Chilli Chicken Recipe

Serves: 4
cooking time: 40 min

Ingredients:

4 skinless chicken breasts
1/4 cup sweet chilli sauce
Juice of 1 lemon
2 tsp grated fresh ginger
2 cloves garlic, crushed
2 tbs chopped fresh coriander
Vegetable oil for frying
2 tsp cornflour
2 tsp green chillies, sliced
2 onion, chopped
1 capsicum, chopped
1 cup chicken stock
For serving:
Steamed rice
Chopped fresh coriander or parsley

Directions:

1. Cut the chicken breasts into slices, approximately 1 inch (2. 5cm) wide, and place in an oven dish.
2. Combine the sweet chilli sauce, lemon juice, ginger, garlic and coriander, and pour the mixture over the chicken. Cover and leave to marinate for 10 minutes.
3. Remove the chicken from the dish and reserve the marinade.
4. Heat a small amount of oil in a frying pan over a medium heat, and cook the chicken pieces for about 5 minutes or until browned all over and cooked through thoroughly.
5. Heat some oil (you can use the same oil, which is used for frying chicken pieces) in a deep pan. Add chopped onion, capsicum & salt. When it becomes soft (onion doesn't have to change colour), add the sauce mixture (blend the cornflour with the stock). Bring the mixture to the boil, Add fried chicken pieces, mix well. Cover & cook till the sauce is reduced & chicken pieces are coated well with the sauce.
6. Serve the dish steamed rice, and sprinkled with chopped coriander or parsley.

Ingredients:

1 tsp. Grated fresh ginger or
1/2 tsp. Ground ginger
1/2 tsp. Dry mustard
1 c. Carrots, chopped in small strips
1 c. Onions, coarsely chopped
1 c. Broccoli, chopped in small strips
1 tbsp. Soy sauce
2 c. Cooked rice
1/3 c.Raisins (optional)
1/3 c.Sliced canned water chestnuts (optional)

Directions:

1. Mix the ginger and mustard with 1/2 c. water, and heat the mixture to boiling in a large skillet.
2. Add the vegetables, and stir-fry over moderate heat until tender, about 10-15 minutes.
3. Add the soy sauce and rice, mix well, and heat thoroughly, stirring as needed.
4. Stir in the raisins, and water chestnuts, if used, while the rice is heating.

Ingredients:

1 tsp. Grated fresh ginger or
1/2 tsp. Ground ginger
1/2 tsp. Dry mustard
1/2 tsp. Cumin seeds
1 c. Carrots, chopped in small strips
1 c. Onions, coarsely chopped
1 c. Broccoli, chopped in small strips
1 tbsp. Soy sauce
2 c. Cooked long-grain brown rice
1/2 c.Chopped cooked chicken
1/3 c.Raisins
1/3 c.Sliced canned water chestnuts

Directions: 

  • Heat the oil in the large pan and add the cumin seeds, mustard and ginger, Add the onions, let them fry until light golden brown.
  • Add the vegetables, and stir-fry over moderate heat until tender about 10-15 minutes.
  • Add the soy sauce and rice, mix well, and heat thoroughly, stirring as needed.
  • Stir in the chicken, raisins, and water chestnuts, if used, while the rice is heating.

Gobi Manchurian Recipe

Making time: 45 minutes
Makes for: 6

Ingredients:

1 medium. cauliflower clean and broken into big florets.
1 small bunch spring onion finely chopped
2 tsp. ginger finely chopped
1 tsp. garlic finely chopped
1/4 cup plain flour
3 tbsp. cornflour
1/4 tsp. red chilli powder
2 red chillies, dry
3 tbsp. oil
1½ cups water
1 tbsp. milk
1 tbsp soya sauce

Directions:

1. Boil the florets for 3-4 minutes in plenty of water, to which a tbsp. of milk has been added.
Drain and pat dry on a clean cloth.
2. Make thin batter out of flour and 2 tbsp.cornflour, adding 1/4 tsp. each of ginger and garlic and red chilli powder and salt to taste.
3. Dip the florets in the batter one by one and deep fry in hot oil. Keep aside.
4. In the remaining oil, add remaining ginger, garlic and crushed red chilli and fry for a minute. Add the salt and spring onions.
5. Stir fry for a minute. Add 1½ cups water and bring to a boil. Add 1 tbsp. cornflour to 1/4 cup water and dissolve well.
6. Gradually add to the gravy and stir continuously till it resumes boiling. Boil till the gravy becomes transparent. Add florets and soya sauce. Boil for two more minutes and remove. Serve hot with noodles or rice.

Chicken Lolipops Recipe

Serves 2 Prep Time 20 minutes

Cooking Time 25 minutes

Ingredients:

6 chicken wings, lollipop-style
2 tsps Garam masala
1/2 cup all-purpose flour
1/4 cup cornflour
1/2 teaspoon red food coloring

1 teaspoon soy sauce
1/2 teaspoon chili powder
1 teaspoon distilled white vinegar
1 teaspoon chopped garlic
1 teaspoon finely chopped green chile peppers
salt and pepper, to season
oil for deep-frying, such as corn, canola,
or vegetable oil
chopped green onions for garnish

 Directions:

  1. TO MAKE MARINADE: Combine the soy sauce, red chili powder, vinegar, mix well and make a paste of ginger, garlic, green chillies, pepper powder and garam masala and apply to chicken.
  2. Next make a batter of all purpose flour and corn flour and add it to the above. Add the water, red food colouring and salt and set aside for some time.
  3. After marination is done, have a deep-frying vessel and pour oil. Heat the vessel.
  4. Now start lollipops to fry on a low flame for about 5- 7 minutes. You can check if they are cooked or not my simply immersing a knife or fork. If it goes in and comes out smoothly, the lollipops are cooked.
  5. To make them crispy, high your gas flame and fry for 2-3 more minutes till they turn a little dark in colour.

Chinese Bhel Recipe

" Chinese bhel is a delicious snack. it is made by noodles and contains lots of sauces and vegetables also.so a very nice home made recipe. It's easy to prepared and really yummy."

Chinese Bhel Recipe

Ingredients: 

200 gm noodles
6-8 cup water
oil for frying
1/2 cup shredded carrot
2-3 spring onions, sliced
1/2 cup bean sprouts
1/4 cup peanut, roasted and crushed
1 tablespoon Szechuan sauce 
1 tablespoon tomato ketchup
 spring onion greens, sliced, for garnish

Method:

  • Boil noodles in six to eight cup of salted to which one tablespoon of oil has bean added to cook till almost done.
  • Drain, refresh in cold water, drain again and spread on a large plate to cool. Heat sufficient oil in a wok and deep fry noodles till crisp and golden brown in colour. Drain and place on absorbent paper.
  • When cool, lightly crush the fried noodles and set aside. In a large bowl combine fried noodles, spring onions, bean sprouts and peanut and toss to mix well.
  • Add Szechuan sauce and tomato ketchup and toss the mixture again.
  • serve, garnished with spring onion greens.
