"You can make a colorful and nutritious lentil salad recipe by sprouting whole green lentils, called sabut moong daal in Hindi. This beautiful dish makes a healthy snack, or it can be served as a side dish. Sprouted lentils have increased nutritional value due to germination and sprouting. Growing your own moong sprouts is relatively easy and gives you fresh sprouts for your meals."
Serves - 4 to 6
Prep time: 15 minutes + overnight soaking (12 hours) + 1 day sitting (24 hours)
Ingredients:
½ cup (100 g) dried whole green lentils (sabut moong daal)
1 small fully ripe tomato, such as plum (Roma), diced

½ red bell pepper, diced
5 red radishes, or 1 small turnip, diced
½ small red onion, diced
4 tablespoons peeled and diced cucumber (any variety)
1 handful fresh coriander leaves (about ¼ cup/10 g packed leaves), rinsed and chopped
¼ teaspoon ground red pepper

Directions:
- Place the lentils on a plate. Sift through them and remove any grit.
- Transfer the lentils to a small bowl. Rinse the lentils three times by repeatedly filling the bowl with cold water and carefully draining off the water. Add cold water to cover the lentils. Cover the bowl and let soak overnight at room temperature.
- By the next morning, the lentils should be tender. Drain the water from the bowl. Cover the bowl and place aside at room temperature until the following morning. The next morning, you will see long sprouts. At this point, if you are not ready to make the salad, you can cover and refrigerate the sprouted lentils up to 1 day.
- Place the sprouted lentils and the rest of the ingredients in a serving bowl. Mix to combine. Enjoy now or refrigerate up to 1 hour.
