Shrimp Cakes Recipe ( Thai Shrimp Cakes Recipe )
SHRIMP CAKES

INGREDIENTS:

1 pound peeled and deveined jumbo shrimp, tails removed
1 cup plus 3 tablespoons whole wheat plain panko (or gluten-free)
¼ cup red onion, finely diced
1/4 cup finely diced red bell pepper
1/4 cup finely diced celery
2 tablespoons chopped fresh parsley
1 tablespoons light mayonnaise
1 teaspoon Dijon mustard
1 large egg
2 tablespoon fresh lemon juice
3/4 teaspoon Old Bay seasoning
½ teaspoon garlic powder
Freshly ground black pepper, to taste
¼ teaspoon kosher salt
2 tablespoons olive oil
lemon wedges, for serving
hot sauce, for serving (optional)

DIRECTIONS:


Pat shrimp dry with a paper towel and place in a food processor fitted with a metal blade. Pulse until shrimp are finely chopped. Transfer shrimp to a medium bowl and add 3 tablespoons of panko, red onion, red pepper, celery, parsley, mayo, mustard, egg, lemon juice, old bay, garlic powder and pepper. Mix gently.

On a small plate, combine 1 cup panko with ¼ teaspoon of salt and pepper. Using a 1/3 cup measuring cup, scoop shrimp mixture and using your hands, for mixture into a 1-inch patty. Place patty on the plate with panko and evenly coat with panko mixture. With a large spatula, carefully transfer shrimp cake to a plate (you may have to re-form the cake a bit). Repeat with remaining mixture. You should end up with 8 patties.

In a large skillet over medium-high heat, add 1 tablespoon of oil. When oil is hot, add 4 patties, evenly spacing them apart. Cook for 3 minutes, carefully flip with the spatula and cook an additional 2-3 minutes. 

Place cooked cakes on a plate, add remaining tablespoon of oil and repeat the process with the last 4 cakes.

Place 2 shrimp cakes on 4 plates, sprinkle with parsley and serve with lemon wedges and hot sauce (if using).

SHEET PAN TERIYAKI SALMON AND VEGETABLES

This easy and delicious salmon dish is made with wild salmon, broccoli and mini rainbow bell peppers seasoned with Asian flavors. SO good, I could east this every week and ready in 20 minutes!

INGREDIENTS:

FOR VEGETABLES:

2 cups (bite-size) broccoli florets
10 mini sweet rainbow peppers, seeded and halved
1 tablespoon sesame oil
¼ teaspoon kosher salt
Freshly ground black pepper, to taste

FOR SALMON:

2 (4 ounce) wild salmon filets
1 teaspoon sesame oil
1 garlic clove, grated
½ teaspoon grated ginger
2 tablespoons reduced sodium soy sauce (or gluten-free for gf diets)
1 teaspoon unseasoned rice vinegar
1 teaspoon brown sugar

FOR GARNISH:

½ teaspoon toasted sesame seeds
1 large scallion, chopped

DIRECTIONS:

Preheat oven to 400 degrees. Cover a large sheet pan with foil or parchment, lightly spray olive oil and set aside.

Meanwhile, combine sesame oil, garlic, ginger, soy sauce, vinegar and brown sugar in a small bowl and mix. Pour into a large ziplock bag and add salmon, marinate 10 minutes.

In a medium bowl, toss broccoli and peppers with 1 tablespoon sesame oil, ¼ teaspoon salt and pepper. Spread them evenly on prepared sheet pan and roast for 10 minutes.

Remove veggies from oven, toss, and move them over slightly to make room for the salmon. Place the salmon on the sheet pan, reserving the marinade and return to oven, roast an additional 7 to 8 minutes, or until salmon is just cooked through.

While salmon is cooking, heat a small skillet over low heat. Pour the remaining marinade and simmer stirring until the sauce has thickened slightly, about 1 to 1 1/2 minutes.

Brush sauce over salmon and sprinkle fillets with sesame seeds and scallions. Serve with veggies on the side.

  • Bake until fish flakes easily with fork, about 10 to 20 minutes.

Easy Deep-Fried Fish Recipe

Serves: 6

Ingredients:


vegetable oil for deep-frying
300g/11oz plain flour
3 teaspoons salt
2 teaspoons baking powder
900g/2lb cod fillets
2 eggs
250ml/9fl oz milk
2 tablespoons olive oil

Directions:

  • Preheat the oil in a deep-fryer or wok to 180°C/350°F (test by frying a small cube of bread; it should brown in 30 seconds).
  • In a bowl, mix together the flour, salt and baking powder. Dredge the cod fillets in the flour mixture, shaking off any excess. Reserve the remaining mixture.
  • Lightly beat the eggs with the milk and olive oil. Mix in the reserved flour mixture and beat until smooth.
  • Dip the cod fillets into the batter, and deep-fry until crunchy and golden brown. Drain on kitchen paper, and serve straight away

Prawn Cocktail

 Ingredients:

 4 tablespoons mayonnaise
4 tablespoons single cream
2 teaspoons tomato puree
2 teaspoons lemon juice
dash of Worcestershire sauce
dash of dry sherry
salt and ground black pepper
225g/8oz peeled and deveined cooked prawns
a few lettuce leaves, shredded lemon slices, to garnish

Directions:

1. Put the mayonnaise, cream, tomato puree, lemon juice, Worcestershire sauce and sherry in a small bowl, and mix together. Season with salt and pepper.
2. Add the prawns and stir well until the prawns are coated.
3. To serve, put the shredded lettuce in the bottom of four glasses, and top with the prawn mixture. Garnish each prawn cocktail with  lemon slices, and serve cold.
