Ingredients:

Chicken - 1/2 kg

To marinate:

 2 tsp Red chilly pwd
 ½ tsp Turmeric pwd
1 tsp Ginger garlic paste
1 tbsp Lemon juice
½ tsp Salt

To prepare Gravy:

Oil - 3 to 4 tbsp
Bay leaf - 1
Cardamom - 2
Cloves - 4
Cinnamon - 1
Star anise - 1
Onion - 2
Ginger garlic paste - 1 tsp
Coriander pwd - 1 ½ tsp
Cumin pwd - ½ tsp
Tomato - 2
Red chilly pwd - 2 tsp
Chopped capsicum - ¼ cup
Coriander leaves
Salt to taste

Directions: 

1. Prepare marinade with the ingredients given above.  Add chicken and mix well in the marinade. Marinate for 30 minutes.

2. Ginger and Garlic along with red chillies should be grounded to form a fine paste which should be kept aside.

3. Take a kadai/vessel and heat the ghee and oil in the kadai. Add whole garam masala spices. Sauté till it crackles.

4. Freshly chopped onions should be added to the hot oil-ghee mixture and sauteed until the onions turn a light brown colour.

5. Half of the coarsely grounded spice powder should now be added to the sauteed onions along with the spicy ginger garlic paste which you had kept aside.
 Keep sauteing the onions for a period of nearly four minutes. Now is the right time to add the chopped tomatoes to the sauteed onions. Add salt according to taste and keep sauteing the onions-tomatoes mixture until the tomatoes becomes soft.

7. Add the marinated chicken pieces to the above mixture and keep stirring the kadai chicken. The remaining spice powder along with the coriander leaves should now be added to the curry and mix it.

8. Half a cup of water should be added to the chicken and keep stirring it. Cover the vessel and cook the kadai chicken on a medium flame for 10 mins. Once the chicken is three-fourth done, add chopped capsicum / bell pepper, garam masala. Stir well and cook for another 5 to10 mins in low flame. ( till the chicken is completely cooked .

9. Congratulations your kadai chicken is ready to be served. Please remember to sieve it hot. This tastes great with roti / plain rice / chapathi or with paratha.
