Ingredients:
1 1/2 cups flour, plus
1 tablespoon flour
1 tablespoon salt
2 teaspoons black pepper
2 teaspoons Italian herb seasoning
3 lbs boneless skinless chicken breasts
3 fluid ounces vegetable oil, divided
1 lb penne pasta
1 tablespoon garlic, chopped
1 red pepper, julienne cut
1/2 cup white wine
1/2 lb whole spinach leaves, stemmed
12 fluid ounces heavy cream
1 cup parmesan cheese, grated
1 tablespoon flour
1 tablespoon salt
2 teaspoons black pepper
2 teaspoons Italian herb seasoning
3 lbs boneless skinless chicken breasts
3 fluid ounces vegetable oil, divided
1 lb penne pasta
1 tablespoon garlic, chopped
1 red pepper, julienne cut
1/2 cup white wine
1/2 lb whole spinach leaves, stemmed
12 fluid ounces heavy cream
1 cup parmesan cheese, grated
Directions:
1. First prepare the chicken: In a shallow dish, combine 1 ½ cups flour, salt, black pepper, and Italian herb seasoning.2. Dredge chicken in the mixture made. Keep in mind to shake off any excess.
3. Divide chicken in batches. Sauté each batch in a large, nonstick, oven proof skillet over medium high heat for about 2-3 minutes per side. The oil must be enough to coat the chicken.
4. You should have a preheated oven at 350 degrees Fahrenheit. When done sautéing, transfer the skillet in the oven. Let it cook for about 15 minutes or until the internal temperature reaches 165 degrees Fahrenheit.
5. The pasta: Cook pasta al dente or cook according to the instructions on package. Drain pasta and set aside.
6. Prepare the sauce: While you’re cooking the pasta, heat ½ - 1 fluid oz of oil in a saucepan. Throw in the garlic and red pepper. Cook for about a minute.
7. Gradually add in the remaining tablespoon of flour. Stir to incorporate it with mixture. After that, pour the white wine and bring to a boil for a minute. Mix the spinach and cream. Boil again. You will know when it’s done cooking when the spinach becomes wilted. Stir in Parmesan cheese to complete the mixture.
8. Tuscan Garlic Chicken entrée: coat a part of the pasta with sauce. Place in a large bowl or individual dishes if you like. Top it off with the chicken, remaining sauce, and extra Parmesan cheese. Serve and enjoy!
