Paal ice, as the name indicates, its made of milk as the main ingredient. This is a famous childhood popsicle we used to enjoy during the summer. No one can forget this paal ice and rose ice. These two used to be my favorite during my childhood. These kuchi ice, how we call it are mostly sold in summer, when it will be holidays (academic year break), so can't explain the happiness when we hear the bell sound of the ice vendor. As the bell sound is heard when it is far away in the near by streets, the next task will be convincing my mom. It will be usually 1 rupee, which me and my brother +Sendhil will get from my mom and run to get the ice pops and enjoy it. Who were aware about the hygiene, which water they used or what, nothing used to be a matter. I don't exactly remember the taste and flavour of this paal ice, but I clearly knew it had no strong flavour, just plain milk flavour and it used to be thick and creamy. I loved rose ice better though this is my next favorite. To my knowledge, paal ice used to cost slightly more than the other popsicles.
Few years back, when I contributed the summer recipes under the topic of Icecreams and popsicles to Tamil magazine Kungumam Thozi, this was one of the recipes. It was different recipe with corn flour for thickening the milk, but this time I thought will try cream instead to make it rich. I used flavoring also in that recipe, not here. When I gave Aj, he really loved it and have asked to make it again often. The simple flavour of milk and cream in this recipe was perfect for recreating the paal ice we used to have during our childhood. Video coming soon!

- Milk - 3/4 cup
- Cooking cream - 1/4 cup
- Sugar - 1 tbsp
Method
- In a heavy bottomed pan, heat milk. Add cream to it
- Stir in sugar. Once sugar dissolves, switch off the stove.
- Cool down and pour into popsicle moulds. Freeze overnight.
- To remove the popsicle from the mould, show it for 30 seconds under running tap water all over its surface. Gently pull off the handle.
Notes
- You can reduce cream quantity and just add 1 tbsp and use more milk.
- Sugar quantity depends on your taste.
- You can use flavours like cardamom or vanilla essence.
- If you do not give enough freezing time, the popsicle cannot be pulled out from mould and only the handle will come out.
