Caramelised Mango Toast

Caramelised Mango Toast is just right what you want to dig in when you are either planning a meal for one or want to try new dishes with mangoes. In my case, it was neither and the plain need to make a new dish for the theme, prompted me to attempt at this and we had for snacks.

I was talking about toasts with my colleagues and my friend suggested the ones her Mom used to make for them as kids. She talked about soft bread with fresh mangoes. Since that would hardly count as a recipe for me to share, I thought I should make some attempt at making a twist.

So I caramelised the mangoes and toasted the bread. Scooped the mangoes on top and served with fresh mint leaves and voila it was a delicious snack. I know I could eat this for my dinner as well. You can make this when you are bored with overflowing mangoes in season.

On my part, I am yet to have a proper fill of mangoes this year. Will have it soon, though this snack was a great way to initiate the eating session!

Caramelised Mango Toast

Caramelised Mango Toast

Bread Slices as required
Mangoes ripen as required
Ghee as required to toast
Sugar if required

Trim the bread slices and toast with ghee.
Heat a nonstick pan with ghee and toast the sliced mangoes, with sugar sprinkled on top if it required.
Transfer the toasted bread on the plate, scoop the caramelised mangoes on top of the bread and serve!
