Paneer Cheese Chutney Toast is a quick and easy toast that you can make for dinner or anytime. When you are short of time and need a quick dinner fix, then these toasts are really handy. Boys and Hubby Dear have gone on a trip and its only Konda, myself. I made these sandwiches for ourselves and took it for my parents as well. Amma loved these sandwiches so much that she said she was full.
We love toasts or sandwiches for any meal. This toast was just right in spices, with all the flavours intact. And the cheese was so delicious over the chutney and roasted paneer.
While I know Hubby dear may not like toasts for dinner, we are fine with it as all of us enjoy it. So I thought I could make these for dinner and it will be perfect for the Toast for Dinner theme for week 2 BM#66
Paneer Cheese Chutney Toast

Paneer Cheese Chutney Toast
For the Green Chutney
1/2 cup Coriander Leaves
1/2 cup Mint Leaves
4 nos Green Chillies
2 Garlic
2 tbsp Peanuts Roasted
1 tsp Lemon Juice
Salt to taste
For Making the Green Chutney
Wash and drain the leaves. In a mixer, take all the ingredients except lemon juice, and grind to a fine paste without adding water.
Transfer to a bowl, adjust spice and squeeze in the lemon juice
For the Roasted Paneer
1 cup Paneer
Salt to taste
1 tsp Ghee
1/2 tsp Garlic Powder
1/2 tsp Onion Powder
1/2 tsp Red Chilli Powder
A Pinch Turmeric Powder
Salt to taste
For Making the Roasted Paneer
If you are making paneer at home, check out how to make Paneer at home
Else if using ready to use paneer, wash well and cube into small pieces.
Heat a nonstick pan with ghee, add the paneer and all the spice powders. Toss well and cook for 5 to 7 mins.
Remove to a bowl.
Other Ingredients
Bread Slices as required
Cheese as required
Ghee as required
To make the Open Toast
Heat a pan and toast the bread slice with ghee on both sides.
On one side, spread the green chutney, place the roasted paneer on top. Cover with cheese.
Microwave for 30 secs
Serve hot.

I had garlic and onion powder on hand, else you can add garlic, onion to the green chutney while grinding.
