Hi Supermoms,
Ladies Finger Sambar ( Vendakkai Sambar) is a popular sambar at home. Ladies Finger imparts so much flavour to the sambar and tastes heavenly with rice or as a side dish to any tiffin.
Usually, home made sambar powder is used to spice this sambar. Tuvar dal/ Arhar dal/Pigeon peas is most ideal to use in this sambar.

Vendakkai Sambar | Ladies Finger Sambar Recipe:
Preparation time : 10 minutes
Cooking time : 25-30 minutes
Serves : 4
1 cup = 250 ml cup
Important Note : wash the ladies finger , pat dry and then cut/chop them .
Ingredients :
10-15 ladies fingers ( medium size)( cut into 2" pieces)
2 tomatoes ( small) ( finely chopped)
marble size tamarind ( soak in 1/2 cup warm water for 30 minutes, extract juice)
1/2 cup pigeon peas/tuvar dal ( boiled and mashed)
1/4 teaspoon turmeric powder
1 & 1/2 teaspoon sambar powder
salt to taste
For tempering :
2 teaspoons oil ( I use sesame oil)
1/2 teaspoon mustard seeds
1/4 teaspoon fenugreek seeds/methi seeds
1 sprig curry leaves
pinch of asafoetida
Garnish ( optional):
handful of cilantro leaves ( finely chopped)
Method :
1. Heat a kadai/wok or a wide pan with oil and temper with ingredients given for the same.
2. Now add the chopped ladies finger , tomatoes, turmeric powder, sambar powder, salt and cook over low flame for 3-4 minutes.
3. Add the tamarind juice and another 1 cup of water.
4. Partially close the pan and allow the sambar to cook for 7-8 minutes over low flame.
5. Now add the boiled and mashed dal and mix well.
6. Let the sambar simmer for another 7-8 minutes.
Chef tip : You can adjust water according to the sambar consistency you like. If I am serving it for tiffin, I add more water.
7. Switch off and transfer the sambar to a serving dish.
8. Garnish if you like.
Your delicious Tam Brahm Style Vendakkai Sambar is ready. I served it along with Arisi Upma Pidi Kozhakattai.
