As I am slowly prepping myself up to let go of the current job, I need to get back to a few hours of an online course. Well, with multitasking as the keyword word for so long, I suddenly find myself incapable of concentrating on just one task at a time. I do agree, my mind is on different thoughts and apprehensions about the ongoing scenario but, being unable to get myself through a lecture was something I did not believe I would face one day.
The solution to the problem
Snacking is a great week to bridge the gap between meals. It is also a great way to break up that large one meal into smaller portions. The right snacks help to retain the pleasure of studying and of course the mood. Snacks richer in proteins wholesome grains with minimal sugar are what you need to keep up with. (Source). So chuck out the caffeine, those sugar-laden treats and all that packs of empty calories.
Keep some good fruits at hand, a couple of packs of nuts and seeds as a trail mix and of course a few other easy to keep recipes.

Some unique additions – cocoa nibs
Cocoa nibs are nothing but broken bits of the cocoa bean. The Theobroma cocoa or the cocoa tree is short perennials that produce the most decadent ingredient in the world the cocoa beans. Harvested and fermented producing the rich and chocolatey beans, these are the precursors for that melt in the mouth chocolates. Crushed raw beans produce a slightly bitter, these cocoa nibs are one of the least processed elements you can get out of the chocolate family on a supermarket aisle. These cocoa nibs are also low in sugar making them a great one to keep packed with flavonoids and antioxidants.
The challenge at hand
Priya Vijayakrishnan is my partner for the current session of the chocolate challenge at shh cooking secretly group. The challenge proposed by, Mayuri Patel, was a blessing to use a pack of cocoa nibs that I had picked up. Adding in the ingredients, milk powder and dry fruits that Priya proposed, these bliss balls just turned out so perfect.
I can feel the cocoa nibs and the combination with the milk powder makes chocolate in my mouth with that refreshing lime to run through it, it makes this snack a great one to munch on while studying or one for a postworkout snack.

- 1/4cup sunflower seeds
- 1/4cup cashewnuts
- 1/4cup almonds
- 1/8cup dessicated coconut
- 1/8cup milk powder( optional, omit for the dairy free option)
- 1/8cup cocoa nibs
- 10soft Dates( soft variety)
- 1tsp lime zest
- 3-4drops lime juice

Dry roast the almonds, cashew nuts and the sunflower seeds on a gentle heat (stovetop) or very low temperature for about 20 minutes in the oven.

Cool them and blitz them in the processor till they are a coarse mix, Add the cocoa nibs, milk powder, and lime zest and blitz further.

Remove a tbsp of coconut from the 1/8 cup and add the rest to the processor.

Add the lime zest, pitted dates and lime juice and blitz till they come together.

Make small balls of this mix and roll in the dessicated coconut.

Save in an airtight container and have as a snack
Alternately, you can press them into a square basking dish line with parchment paper and chill. cut them into squares after about half an hour and save in airtight boxes.
If you choose to make them just with one type of nuts or seeds that works well too. I do the recipe just with sunflower seeds and pumpkin seeds for my children for school as nuts are an allergen.
