This Georgian cheese bread recipe is perfect to serve weekend brunch and it turns out incredibly delicious every time. Here is how to make Khachapuri bread with a sauce that cooks right with it. 

No kidding, Khachapuri bread (pronounced “cahh-cha-poo-ree” or “ha-cha-poo-ree”) is a mouthwatering, easy bread recipe. It is different from a regular pizza or bread you have for breakfast. In Khachapuri, the texture of the bread is soft and fluffy. 

It is so delicious that I can have it practically for any meal. Mini versions for teatime are so cute that you can’t resist making them 

In Khachapuri, the dough is in the shape of a boat and baked in the oven. And has a running egg in the center. It tastes best when served warm with fresh herbs. This way you can dip the bread in the runny egg and enjoy this delicacy. The egg makes the bread extra smooth and creamy. 

This bread is perfect for a satisfying brunch or dinner with a fresh quinoa salad or chicken tikka. The beauty of this recipe is that it is one of the easiest recipes that will outshine your cheese pizza any day. 

What is Khachapuri

Khachapuri is made in different shapes and with a variety of dough, sizes, and filling. It mostly depends on the region and people’s preferences. The boat-like dough with cheese filling with egg in the center is known as Adjarian Khachapuri. The egg creates a rich gooey sauce that is perfect for brunch, dinner, or an appetizer. 

When I cook this cheese-stuffed Georgian bread, I leave the egg slightly undercooked so that it gets stirred in the hot melting cheese. Some people keep the egg to runny consistency. This way you can just tear off the bread pieces, dip in the filling, it tastes extra creamy and smooth.

So how much you want the eggs cooked is really your choice.  

Ingredients to make Khachapuri Adjarian

Dough: Milk, water, sugar, olive oil, active dry yeast, all-purpose flour/maida. (You can use cornmeal or whole wheat flour too.)

Cheese: Farmers Cheese, Shredded Mozarella, Feta Cheese

Unsalted Butter

Step by Step for Khachapuri Adjarian

Khachapuri Step 1

In a stand mixer, pour milk, water, sugar, active dry yeast, olive oil, all-purpose flour, and salt. [photos1,2,3,4,5,6]

Khachapuri Step 2

Knead the dough till it is smooth and elastic. [photos1,2] Pat some dry flour and place the dough in it. Now with the fingers press the dough inwardly and then fold it 2-3 times. [photos3,4] Cover the dough with a cloth for 30 minutes or till it doubles in size. [photos4,5,6]

Khachapuri Step 3 

Place the dough again and cut it into 2 equal pieces. Give the dough a circular shape with a rolling pin and add cheese in the corners of it. [photos1,2,3,4]

Roll the sides of the circle towards the center so that it has a boat-like shape. Now, pinch the corners together. [photos5,6]

Preheat the oven to 450 degrees. Line parchment paper on a baking tray and place the Khachapuri bread in it. Add more cheese in the center of the bread. [photos1,2]

Bake for 15 minutes or till the crust becomes golden brown. Take it out of the oven, with the back of a spoon, make a well in the center by pushing down the melting cheese. Crack an egg and add it in the center of the bread. [photos3,4]

Stick a few pieces of unsalted butter in it.[photo 5] Place it back in the oven for another 5-6 minutes. The egg should be white but a bit runny. At the time of serving mix the egg with the cheese and then serve. [photo 6]

How To Make the Dough

The incredible taste of Khachapuri depends on the boat-shaped dough. The bread can be made with any dough of your choice, I like to use all-purpose flour. It gives me the desired pizza-like dough texture that is easy to roll out. The dough needs to be slightly wet and tender. The wetness will help hold the shape and tenderness will make it easy to tear off in pieces.

If you like you can shape your dough in pita or naan. For that use stronger, stiffer dough that uses less water. You can make Khachapuri quickly once the dough is well-rested.

Can I Khachapuri dough in advance?

You can make the dough overnight, wrap it with plastic wrap, and keep it in the refrigerator. The dough should rise overnight. (The fluffier the bread, the tastier it gets.) When you wish to make it, cut it into 4 parts. Shape the dough into boats and allow it to rest for 20-25 minutes. Keep it in the room temperature or somewhere slightly warmer. Then fill it with cheese and bake it. 

Recipe Tips: 

  • You don’t need special equipment to prepare the dough. But if you have a stand mixer then it will cut short the kneading time.
  • Active Dry Yeast helps in the gluten-free development of the dough.
  • To save time you can use ready-made pizza dough for making khachapuri

What to Serve with Khachapuri

You can make Khinkali (Georgian dumplings stuffed with meat and spices) and serve it alongside khachapuri. You can even serve it with fresh yogurt and a salad.

Instructions

  • In a bowl of the stand mixer, pour ½ cup milk, ¼ cup water, 2 teaspoon sugar, 1.25 teaspoon active dry yeast, 2 teaspoon olive oil, 2 cups all-purpose flour, and 1 teaspoon salt.
  • Attach the hook and begin kneading the dough till it is close to being smooth and elastic.
  • Place dry flour on any board or flat surface so that the dough doesn’t stick on it.
  • Place the dough on it. Now with the fingers press the dough inwardly and then fold it 2-3 times.
  • Place the dough inside a bowl and cover the dough with a cloth for 30 minutes or till it doubles in size.
  • Spread some dry flour on the flat surface. Cut it into 2 equal pieces.
  • With your fingers start spreading the dough in a circular shape. Or with a rolling pin give the dough a circular shape.
  • In the corners of the circle add cheese. Roll the sides of the circle towards the center so that it has a boat-like shape. Now, pinch the corners together. (as shown in the video)
