When it comes to banana bread, the only downside of making it is having to wait for it to be done — so I’ve decided to solve for that. And guess what? Along the way I’ve also solved for not having enough ingredients to make an entire loaf — so if you only have ONE overripe banana, that’s fine, because you’re about to have some banana bread, baby!

Not only is this fast and economical, but it’s also flourless. It’s basically blended oats (oat flour) and banana. Not only do I recommend you make this immediately, especially if you’re over making entire loaves of banana bread, but you’re not over eating them, but I think you should be doing this with your kids. It’s a great way for them to get a treat while secretly learning about measurements and baking!

The texture is super soft, it’s perfectly sweet, and it’s full of filling and good ingredients. What’s not to love?

How To Make The Fastest Banana Bread

Banana bread is not hard to make, but if there’s an easier route to something, you bet I’m going to take it. Check out how quick it is to make your next serving of banana bread in a mug (and don’t forget to get the full recipe with measurements, down below):

  • Mash the banana in a microwavable mug.
  • Next, add in oil, maple syrup, and vanilla.
  • Then, you’re going to add in the oat flour, baking powder, salt, and cinnamon. Mix!
  • Dot your blueberries over the top. (You can leave them out if you don’t have them.)
  • Microwave for around 45-55 seconds. (This time is based on my 1200 watt microwave, so your timing might vary.)
  • Enjoy immediately for breakfast, snack, or dessert!

Gemma’s Pro Chef Tips For Making Banana Bread In A Mug

  • Mix it up the night before! Talk about time-saving.
  • If you don’t have banana use apple sauce or pumpkin puree
  • Add blueberries for extra flavor, but you can also add raspberries or strawberries
  • Use honey or agave instead of maple syrup
  • If you want only zero-calorie, zero-glycemic sweetener use liquid Lakanto

Ingredients

  • 2/3 medium ripe banana (5 inches)
  • 2 tablespoons flavorless oil (coconut, veg, canola, sunflower etc)
  • 2 tablespoons maple syrup (or honey)
  • ¼ teaspoon pure vanilla extract
  • 6 tablespoons oat flour (just finely blend up oats)
  • ½ teaspoon baking powder
  • pinch of salt
  • pinch of cinnamon
  • 2 tablespoons blueberries frozen or fresh (optional)

Instructions

  • In a microwaveable mug, mash the banana really well.
  • Next, add in oil, maple syrup, and vanilla.
  • Add in the oat flour, baking powder, salt and cinnamon and mix into until combined
  • Dot your blueberries over the top
