Tandoori Paneer Tikka Recipe

Tandoori Paneer Tikka


Serves:  3 to 4
Prep time: 15 minutes + 1 hour marinating
Cook time: 30 minutes

Ingredients:

500 gm Indian cottage cheese (paneer) cubed
150 gm capsicum (shimla mirch) chopped
1 tablespoon vegetable oil
Four to six 12 in (30.5 cm) wooden skewers
1 small onion, cut into 8 wedges and layers separated
Juice of 1 lime

MARINADE
1 tablespoon minced garlic
Juice of 1 lime
3 tablespoons vegetable oil
½ teaspoon ground coriander
1 teaspoon paprika
½ teaspoon ground red pepper (cayenne)
¾ teaspoon salt
½ teaspoon ground black pepper
1½ teaspoons plain yogurt or plain soy yogurt

Directions:

1. Place all of the ingredients for the Marinade in a small bowl. Mix well. Pour half of the Marinade evenly over the paneer pieces. You may use a spoon or your fingers to spread it out. Turn over the paneer pieces and pour the rest of the Marinade over them, making sure all sides of the panner pieces are coated with Marinade. Cover the dish and let rest at room temperature for 1 hour or refrigerate for up to 1 day. At this time, place the wooden skewers in a shallow dish with water to soak them for 30 minutes so they do not burn when in the oven.
 2. Preheat the oven to 400°F (200°C). While the oven is heating up, spread 1 tablespoon of the oil evenly on a baking sheet. Thread alternate pieces of paneer, onion slices and capsicum on the wooden skewers. Lay the skewers on the oiled baking sheet.
 3. When the oven is heated, bake the skewers for 15 minutes. Turn the skewers and bake 15 minutes more.
4. Remove the skewers from the oven. Sprinkle the lime juice evenly on the skewers. Enjoy now.
